Industry best practices at Namaka ‘Fusion’ restaurant
With the recent upgrade of the training bar at the ‘Fusion’ training restaurant, School of Tourism and Hospitality (STH) students at the TPAF Namaka Centre are achieving learning outcomes in an industry best practice environment.
The bar, designed by hospitality trainers to accommodate up to 20 students, is beautiful in appearance yet highly functional as a training facility, and has been created out of Fijian mahogany and other local timbers by Namaka-based joinery craftsman Steve Toll.
Commissioned in April 2009, the bar’s state of the art features include two commercial espresso machines, coffee grinders, a Winterhalter glass washer, an ice machine, refrigeration, a beer reticulation system and extensive cocktail making equipment.
The two highly trained and experienced APTC trainers who facilitate the popular Barista classes come from a strong industry background, and are passing on skills in high demand throughout the hospitality industry.
Vittoria Coffee is the School’s industry partner in all matters regarding coffee. Their Fiji agent, Tappoo, is providing APTC and its students with product and machinery support.
As well as the classes conducted four times a week for the APTC students, TPAF, host organisation of STH, uses the bar to conduct classes.
Fusion restaurant is currently open twice a week to the public. With the new bar facilities students are now able to complement their guests’ dining experience with delicious cocktails and a wide range of espresso coffees
