Lindsay Kove

SIT30816 Certificate III in Commercial Cookery, 2020

Lindsay Kove from Papua New Guinea graduated with a Certificate III in Commercial Cookery  (SIT30816) from the  Australia Pacific Training Coalition (APTC) in 2020. 

Whilst cooking was Lindsay’s hobby from a young age, turning it into a career was challenging when he first started working in the commercial cookery industry. Today,  he has acquired many skills and a multitude of knowledge and experience along with an Australian qualification that has helped grow his career and support his progression to senior roles.

“APTC actually trained me in a way where I feel confident doing things in my field with great confidence and accuracy,” said Lindsay.

Learning about culinary techniques, time management, food presentation, taste consistency and spice application are some of the skills and knowledge that he gained studying commercial cookery at APTC.

“APTC provides the best training to students. The simulated training environment makes us enjoy the training,” he said.

Lindsay was excited to return to the workforce after studying with APTC and use his newfound knowledge and skills on the job.

“My first job after I graduated from APTC  was with Hornibrook’s NGI. I was employed as their Head Chef. I do menu planning and costing and order both dry and frozen supplies. I held many senior responsibilities before but I learned many ideas to manage food industry operations by making a food station to an aggregated level.  I learned about procurement, and yield costing at APTC.” 

Cooking will always be more than a job to Lindsay whose long-term goal is to operate his own food service company where he can serve local and western fusion dishes. He firmly believes that having a passion for what you do is important as you will learn more and grow in your field of work.
